Pale yellow. Ripe peach, pineapple and tropical fruits lifted by spices on the nose. Supple and seamless but with a grassy quality that reminded me of sauvignon blanc. A linear wine with a slightly tart stony edge and a hint of nuts on the finish.
Grapes were machine harvested as well as hand-picked. Only the free run juice was settled and inoculated with selected yeast strains in stainless steel tanks. Fermentation took place under controlled conditions at 12 °Centigrade. |

| Six Hats Shiraz |

A medium bodied wine with an intense red colour and typical aromas of plums, wood and white pepper. Well balanced with soft oak and a long finish.
Grapes are predominantly sourced from Fairtrade vineyards in the Piekenierskloof region. These twelve year old vineyards are trellised and grow on sandy, loamy soils. The vineyards are meticulously farmed and yields are managed down to below 6 tons per hectare. Grapes were handpicked in the first week of March and cold soaked for 24 hours. Fermentation was started with selected yeast strains under controlled conditions at 26 °C. Malolactic fermentation also took place in tank and th wine was matured for six months on French and American oak staves. |
