This is the only apple in the bottle grown in North America. The bottles are placed onto trees in our orchards near Mt. Hood and are harvested when the fruit is full and ripe. Next, the apple is covered with our amber-smooth apple brandy aged in old Cognac barrels of Limousin oak following in the custom of the Calvados makers in Normandy. The apple imparts additional flavor from the high-quality Oregon fruit we use and makes a great gift.

Inspired by an obscure Alsatian distillate called Eau de Vie de Bourgeons de Sapin, Steve McCarthy worked on developing the perfect Oregon version of a tree spirit, an Eau de Vie of Douglas Fir, for ten years. This eau de vie is made from an infusion of the springtime buds of Douglas fir picked by hand into clear brandy which is then re-distilled and re-infused with more buds. Finally it is strained and bottled. The green color and complex fresh flavor are from the Douglas Fir buds. No artificial colors or flavors are added.

This Framboise is a distillation of a pure mash of fermented raspberries grown near the distillery, unlike almost all others. It is very aromatic, very difficult to make, and very expensive. It takes up to 80 pounds of raspberries to make one small bottle of Framboise. Fermentation of fresh whole raspberries is very tricky and some years we don't get it right. So, some years there isn't any at all.

To make our pear-in-the-bottle we actually grow the pear inside of the bottle in our orchards, and then fill it with our pear Eau-de-Vie (pear Brandy). This practice of growing pears in the bottle is traditional in Alsace where pear brandy has been made for hundreds of years. Pear-in-the-bottle is highly labor intensive, requiring weeks of work both putting the bottles on the tree at the beginning of the summer when the fruit are small and removing them when the pears are fully mature. Since we use no preservatives or artificial cleaning solutions each pear and each bottle must be painstakingly scrubbed by hand before the pear brandy is added. Due to the unpredictable nature of pear growth from year-to-year the pear in the bottle is only available certain years.

In 1988, we put together a special blend for the patient investors who provided our original capital funding. We liked it so much that since 1991 we've released about 200 cases every year. The blend's components are selected for fragrance and delicacy, and they include older brandies made from Pinot Noir, which give the blend structure, depth, and a rich, lingering finish.
